Ingredients
(Makes 8 servings)
- One cup brown rice
- One pack of carb-cutting tortillas
- One half packet taco seasoning
- One medium onion
- Green and red bell peppers (one each)
- 2 chicken breasts, diced
- Small container Greek yogurt
- One can of black beans, rinsed
- Old El Paso Creamy Queso Sauce (optional)
Instructions
- Rinse rice until it runs clear (to remove starches) and cook rice as directed.
- Cut peppers and onion in strips.
- Dice raw chicken breasts.
- Spray large pan or wok with vegetable oil (or use olive oil).
- Heat pan to medium high.
- Add chicken to pan and flip when it gets white around the edges.
- Once chicken is brown on both sides, add onion and peppers to pan.
- Add two tablespoons of water and half packet of taco seasoning to pan.
- Reduce heat to medium and let simmer.
- Rinse black beans in strainer and put in microwave-safe container. Season beans as desired and microwave until warm.
- Build burritos using tortilla, black beans, rice, chicken mixture, Greek yogurt, and cheese sauce as desired.
